This summer, Salvia at Grand Hyatt Erawan Bangkok unveils a new à la carte seasonal menu, Summer of the Adriatic Coast, available from today through 31 August 2024.
Salvia beckons you to embark on a culinary journey to the Italian Adriatic Coast, renowned for its exquisite seafood. Its head chef, Gabriele Olivieri, has carefully crafted a menu that showcases the finest ingredients and authentic recipes from the region. Each dish on the menu is a testament to his culinary expertise, promising a delightful burst of summer flavours, perfect for sharing with friends and family.
During the summer in Italy, there is an abundance of fresh seasonal produce, such as prawns, calamari, cantaloupe, basil, berries and more. At Salvia, guests can now enjoy these fresh ingredients at the peak of their flavours from the seasonal Summer of the Adriatic Coast menu, available every day for lunch and dinner.
The Menu
The Prosciutto e melone is a classic appetiser with only a few ingredients. The perfectly sweet melon and the mildly salty prosciutto complement each other so well that it is often referred to as a match made in culinary heaven.
Guests will love the Crostino ai fichi, which translates to fig crostini, a summertime favourite. Our crostini, crafted and baked from cold-proofed sourdough, boasts a crisp crust and a pillowy texture. It is topped with the sweet, creamy milkiness of buffalo stracciatella, paired with the delicious sweetness of fresh figs.
One of the season’s standout dishes is the Fritto di gamberi e calamaretti, also known as king prawns and baby calamari. These delectable seafood delights are deep-fried to perfection and served with a zesty lemon mayo, making them a must-try for any seafood lover.
Mezzelune alle paste is handmade potato ravioli generously coated with pesto Genovese, a classic Italian sauce from Liguria. Made with basil, cheese, nuts and olive oil, the pesto packs a slight punch with a slight peppery kick from the minced basil. The meal also incorporates the Camone di Sardegna, a popular Italian tomato with a crunchy texture.
For those who like octopus, the Polpo e ‘Nduja will impress – grilled Western Australian octopus served with potato, celery and cappers enhanced with nduja sauce, a spicy, savoury and creamy sauce reminiscent of the chorizo flavour.
The Cocktail
Toast to the good weather with a truly classic cocktail, the Sgroppino, originating from Venice. This heavenly drink is a classic made with Prosecco, lemon sorbet and vodka, all gently whipped up until frothy and delicious.
