For one night only, on Friday 26th July 2024, Chef Giacomo will present a sublime set menu that features the summertime recipes that have defined his career. Guests will be immediately immersed in a highly evocative ambiance as they savor a selection of handcrafted canapés, accompanied with a flute of sparkling Prosecco from the Veneto region of Italy. This culinary odyssey then commences with an indulgent appetizer of fresh truffle with ratte potato on parmesan fondue & salmon roe, complemented with a crisp Italian Pinot Grigio. This will be followed by one of Chef Giacomo’s signature dishes: a vibrant seasonal plate of white asparagus with chanterelles, Oscietra caviar, mussels and a glacial salad – a favorite from the chef’s early days in Singapore – paired with a citrusy Langhe Bianco white premium beverage from Piedmont.
Diners can then discover two delectable plates that showcase premium produce from the responsible farms and traditional fisheries of Southern Italy. The seafood course of lobster & burrata casoncelli (filled pasta) in a rich lobster bisque will be complemented by a fruity red Montepulciano d’Abruzzo from the Adriatic coast, while the main course of veal tenderloin on celeriac purée with oyster mushroom and bone marrow in Montepulciano jus will be perfectly paired with a classic Tuscan Chianti.
This multi-sensory epicurean adventure will come to a crescendo with an indulgent and intriguing dessert. This playful finale arrives veiled in chocolate, inviting diners to uncover a sweet surprise within – a hazelnut & dark chocolate mousse on almond cake with salted caramel lava!
