Intense, aromatic and indulgent, winter black truffles are highly prized by the world’s leading chefs. Growing naturally in the cool, lush forests of Tuscany and Piedmont, Northern Italy, these delicacies thrive from autumn until early spring, making them a luxurious addition to Italy’s winter cuisine. Only growing on certain types of tree, such as oak, beech or hazel, and taking up to eight years to mature, truffles are a rare and treasured ingredient.

To celebrate this evocative epicurean season, Chef Giacomo Vinci, the culinary maestro at Rossini’s, has revealed his Signature Truffle Menu – a series of seven sensational dishes that showcase the peppery and nutty taste of this precious product. At the start of every dining journey, guests will be presented with an elegant wooden box containing a selection of truffles. Each diner can then pick the desired piece to enhance their plate, creating an interactive element of culinary theater.

To demonstrate the truffle’s versatility, diners can choose from mouth-watering meat, seafood and vegetarian dishes, and even delectable desserts. Options include an enticing appetizer of Uovo al Tartufo (baked organic eggs on spicy salami, stracciatella cheese and fresh winter truffle), and two perfect pasta dishes: Tortelli e Fegato d’Oca (tortelli with foie gras and burrata in beef consommé with fresh black truffle), and Carbonara al Tartufo Nero (tagliatelle pasta in truffle carbonara butter, guanciale and fresh winter black truffle). Main course masterpieces include Branzino e Pisellini (seared sea bass on snow peas and morel mushrooms with fresh winter black truffle), and Costata al Tartufo (Miyazaki wagyu ribeye beef on Jerusalem artichokes, onion gratin and fresh winter black truffle).

Two surprising sweet-savory desserts are also available, including Mela Tartufata (apple tart on almond confetti, vanilla truffle sauce and fresh winter black truffle) and Caffè e Tartufo (fresh truffle and mascarpone tiramisu, flavored with espresso coffee and fresh winter black truffle).

Elevating this epicurean experience to even greater heights, the talented sommelier at Rossini’s can recommend the perfect Italian wines to accompany these opulent truffle dishes, from Piedmont’s famous Barolo to a classic Tuscan Chianti, or even a sparkling Prosecco.
