Recognized for her expertise in dry-aging beef and redefining the Thai steakhouse scene, Lady Butcher—or Chef Nattida Noo-In—has earned a reputation for combining traditional butchery techniques with bold, local flavors. Based in Nonthaburi, she meticulously sources, ages, and curates premium cuts, bringing out the depth of flavor in each bite. Her passion for Thai culinary heritage and precision in handling meats have made her a standout figure in the country’s gastronomic landscape.

This one-night-only collaboration brings together Lady Butcher’s distinctive expertise and The District’s signature fire-grilled techniques, resulting in a masterfully curated menu that pays homage to Thailand’s rich culinary traditions while embracing global influences.

The Five-Course Experience:

Guests will embark on a gastronomic journey featuring:

  • Grace & Grit – A smoked river prawn amuse-bouche, elevated with kaffir lime-infused burrata espuma and Oscietra caviar.
  • Flavors of the Lady – Delicately cured Isan-style beef carpaccio, complemented by a tamarind reduction, toasted rice powder, truffle-mayo dressing, and crispy shallots.
  • Ocean Meets the HighlandsGrilled wild-caught sea bass wrapped in banana leaves, served with black sticky rice risotto infused with galangal and coconut milk, finished with a lemongrass beurre blanc.
  • The Warrior’s CutDry-aged Wagyu sirloin from Australia, grilled over tamarind wood charcoal and served with Lady Butcher’s signature Isaan Jeaw sauce, roasted garlic jus, sweet potato purée, and stir-fried wild mushrooms.
  • Rose & Berries SymphonyStrawberry yogurt gelato, elegantly finished with edible liquid nitrogen-frozen rose petals, creating an interactive, sensory finale.

Each course is designed to be savored on its own or complemented by expertly selected wine pairings, available as part of the dining package.
