On Tuesday to Sunday evenings, Executive Chef Gaetano Palumbo will present a modern four-course Italian menu showcases the finest and freshest ingredients, cooked to perfection. The gastronomic begins with a trio of light, vibrant antipasti dishes: salmone marinato, puma di mozzarella e barbabietola rossa (cured salmon with mozzarella and beetroot foam), battuto di carne cruda al coltello al parmigiano e pan brioche (beef tartare with parmesan and pan brioche), and tonno con capperi, lenticchie beluga e salsa di mandorla (tuna with capers, black lentils beluga and almond sauce).
These elegant appetizers will prepare the palate for the delights to come. For the pasta course, diners can select spaghetti “Rummo” con crema di zucchine e vongole (Rummo spaghetti with zucchini sauce and Manila clams) or tortelli di gamberie e stracciatella (homemade banana prawns tortelli with stracciatella cheese).
Diners will then be treated to a choice of memorable main courses that embrace premium ingredients from land or sea, cernia con salsa puttanesca (garoupa fish with puttanesca sauce), or sottocosta di manzo arrosto con patate affumicate salsa di cipolla bruciata (slow-roasted short rib of beef with smoked potato purée and burnt onion sauce).
The evening concludes with a duo of divine desserts: latte e miele (milk and honey) or Ametika Cioccolato, Coco in Polvere, Pistachio Sorbetto al Frutto della Passione (Ametika flax chocolate with cocoa powder and pistachio & passion fruit sorbet).
