New Bijoux Cocktail Bar “Ruby’s” Unveils a Cocktail Narrative Driven by Passion

Kimpton Maa-Lai Bangkok debuts a seductive new bar concept at the Langsuan hotspot. 

Kimpton Maa-Lai Bangkok, the Langsuan luxury and lifestyle landmark, opens the doors to sensual and beguiling cocktail bar Ruby’s on 19th August 2024. The exclusive, bijoux hideaway seats 16 only, with reservations highly recommended to experience its charismatic appeal.    

Its visual concept is inspired by the shattering of a fabled heart, a twist of gemstone fate and the inherent need for human nature’s revenge. A prequel to Ms.Jigger. Tucked behind flowing curtains, out of sight but not out of mind, the intimate spot is the perfect size for patrons to strike up conversations or immerse in the Ruby’s experience, guided by expert mixologists behind the counter. The softly lit venue envelops in cosy comfort, a sleek sunken bar alongside a wondrous library of premium spirits.  

The Ruby’s philosophy is “cocktails are like kisses,” with each tipple a caress, a linger or wanting for the next. The highlight is 14 cocktails and 2 mocktails inspired by gemstones and their stories, with Old Bangkok as a backdrop, using uncommon ingredients, techniques and preparations. Like gemstones, each is a unique treasure, and progressively styled to introduce never-before-seen taste, aroma and visual sensations to the Bangkok bar scene. Along with a menu, you have truly never seen before. 

The bejewelled highlights include the namesake Ruby, a gin-based cocktail with delicate jasmine notes and bright scarlet ingredients like strawberry, pomegranate and hibiscus. The dazzling Diamond is an intriguing concoction of Tequila Blanco and creamy Hokkaido yoghurt liqueur, organic yoghurt and pear. Emerald boasts bold flavours, with gin, artisanal mezcal, melon, mango sticky rice and durian coconut foam. The Blue Sapphire blends vodka, elderflower, pear, butterfly pea and pear sake with blue spirulina. Onyx captivates with a mix of vodka, Oloroso Sherry, Maraschino, tomato and a touch of black salt.  

“We opened Ms.Jigger in 2020 to great success, offering stories with a theatrical touch. With Ruby’s, we aim to build on Ms.Jigger’s themes and provide our customers with a thought-provoking education about cocktails, likening it to the study of gemstones,” said Patrick Both, Regional General Manager of IHG Luxury & Lifestyle. “Gemstones are very complex and have distinctive characteristics, just like our cocktails. Ruby’s is meant to be a meaningful conversation, not just idle talk.” 

Nouveau-allure extends to upscale bites carefully curated by Chef Davide Calo as well, such as tempura Fine de Claire oyster, fresh red prawn tartare, seared foie gras with wild mushroom and ricotta, and grilled Wagyu beef on fluffy brioche topped with truffle. The pairings are purposeful and relevant to the course, and the heartache.
